For a delicious and non-traditional alternative to a gyro sandwich, use Loukaniko sausages, warming them through on the grill or in a skillet. Top with fresh tomatoes, onions, and a big spoonful of tzatziki sauce (recipe follows).
Ingredients:
- 12 oz Full Fat Greek Yogurt
- ½ English Cucumber, Peeled and Seeded
- ¼ Cup Red Onion, Finely Minced
- 2 Cloves Garlic
- 2 Tbsp Fresh Dill
- 2 Tbsp Olive Oil
- 1 Lemon, Juiced and Zested
- 1 tsp Salt, plus Pepper to taste
Method:
Use the coarse side of a cheese grater to shred the cucumber. Place the shredded cucumber into a tea towel or cheesecloth, gather into a bundle, and squeeze well to wring out excess moisture.
Finely mince the red onion and place it in a bowl of cold water for 10-20 minutes, then strain off the water and allow the onions to drip dry. This not only removes some of the more acrid bite of raw onion but also ensures that the onion stays firm and crisp in the sauce. Finely chop the dill.
In a medium-sized bowl, combine the yogurt, the squeezed shredded cucumber, the drained onions, minced garlic, chopped dill, the olive oil, and the lemon zest as well as half the lemon juice. Add the teaspoon of salt, a few twists of fresh ground pepper, and whisk to combine. Taste, and adjust the seasoning with additional salt or lemon juice as needed. Garnish with some more chopped dill and a swirl of olive oil. Store the sauce in an airtight container in the refrigerator for up to a week, stirring before using.
