USDELISH AND UNEXPECTED
For some reason, I expected a greater proportion of bone to meat - pleasantly surprised that it was way less bone and large enough to smoke..the porky sweetness of meat alongside bone was incomparable - brined in Cuban Mojo and smoked with sassafras wood, it made a few unique and incredible sandwiches:yum:
